🍰 Fluffy White Cornmeal Cake 

📝 Ingredients:

3 eggs

2 cups sugar

1 cup vegetable oil

2 cups milk

2 cups white cornmeal (fubá branco)

1 cup all-purpose flour

1 tablespoon baking powder

A pinch of salt

Optional: ½ cup grated parmesan or shredded coconut for extra flavor.

👩‍🍳 Instructions:

Preheat your oven to 350°F (180°C). Grease and flour a medium-sized baking pan.

In a blender or mixing bowl, add the eggs, sugar, oil, and milk. Blend or whisk well until smooth.

Add the white cornmeal, flour, and a pinch of salt. Mix until well combined.

Stir in the baking powder last. If using cheese or coconut, fold it in gently now.

Pour the batter into the prepared pan.

Bake for 35–45 minutes, or until golden and a toothpick inserted into the center comes out clean.

Let it cool before serving. Enjoy with coffee or tea!
